Pectin is a form of polysaccharide usually found in the call walls of plants. Pectin was first discovered and isolated in the 19th centrury around the time of the industrial revolution. Producers of fruit prevserves would obtain apple pomace which can be cooked to extract a thick pectin solution; they would then add this to their preserves to add stability. Today, most commercially produced pectin is made from citrus fruit peel, then dried and ground to a fine powder.
How to use Pectin Food Pectin is most commonly used in jams, marmalades and fruits preserves as a thickening or gelling agent. Pectin is also used in confectionary jellies to produce a better gel structure. Medicine In the 20th century Pectin was used as an ingredient in medicine to control diarrhea. Pectin increases the volume of stools helping to calm severe symptoms. Pectin is also used in throat lozenges as a demulcent and is also used in specialty medical adhesives. Cosmetics Pectin is used in the cosmetic industry as a stabiliser for creams and lotions. |
