When heated it releases ammonia and carbon dioxide gases, but no water. The lack of water allows the cookies to cook and dry out faster. Ammonium Bicarbonate can be used as foaming agent in beverage. It is commonly used as an inexpensive nitrogen fertilizer. It can also be used for buffering solutions to slightly alkaline pH during chemical purification because it entirely decomposes to volatile compounds this allows rapid recovery of the compound of interest by freeze-drying.
