CMC stands for Carboxymethylcellulose and is added to fondant icing in order to make it easier to work and model with and makes it dry quicker. CMC is the partial sodium salt of a carboxymethylether of cellulose, the cellulose being obtained directly from natural strains of fibrous plant material.
How to use CMC Powder How much do I use? Add 1 level teaspoon per 250g of fondant icing. If you require your icing to be softer then add less CMC (i.e. add 1/2 teaspoon to 250g of fondant icing). When should I add the CMC Powder? Add the CMC Powder at the beginning of the process before adding anything. How long do the fondant paste last? After adding CMC Powder the fondant will begin to dry out, so it will need to be stored in a sealed bag or container and should last about 2-3 weeks. If it drys out too much you can add some vegetable fat to soften it up a little. |
